I used the tie down hooks in my Blazer because there wasn't any other option with 3 kids & the center seatbelt being lap only (biggest kid had to sit up front & I couldn't focus on the road with both dogs between my girls) -- my parents use the top tether anchors + manufacturer's barrier ... if you don't have a barrier* then I'd use the seatbelt with large dogs: which is why my dogs both sat in the front seat in my Escape with all 3 kids in the rear (when I was finally able to trade the Blazer in). Does this make sense? I might not be very clear right now so just tell me if I'm not!
I love your pic, too, BTW I really miss my old Rotty Samsam She was very human-like (as were my Pits! )
* Remember that pressure mounted barriers can shatter, becoming projectiles itself.
I had no problems with having my dogs on the front seat with a seat cover + chew toy, but if you will only let your dog ride in the cargo area & a barrier will interfer with carseat installation, then using the LATCH anchors (tether) would be better than nothing! Some of the vehicle manufacturer barriers still allow easy/correct use of carseats, but they can be expensive.
