Which seat to choose?

This is all a hypothetical situation, FYI.

So my mother may be in a situation where she will have to transport children on semi short notice without knowing any info about the children but the age. Some of the children that will need transportation might have their own car seats, but nothing is assured. We currently have a Combi Coccoro(w/o infant insert) as well as a Britax Parkway SGL, and an Evenflo rightfit booster. We were wondering if we should invest in a new seat like a 4-in-1 or simply try to find the infant insert for the Combi. Any advice would be very helpful.

Something like the Graco Contender would fit a wider range of children to fill in the space between birth and booster. It fits many newborns, though not all (though neither does the Combi, even with the inserts), and fits kids generally to a mature booster age.

After looking at some reviews it sounds like the contender can be a little tough to install. This could be problematic as my mother has some nerve damage in one of her arms. I will be installing the seat most times but would like her to not have to struggle too much when I'm not there to help. Is the one that is easy to install and around that same price range ?

The Contender is not difficult to install. But with nerve damage, depending on how and where it is, nearly everything will be hard to install. The Contender has a rear facing belt path you can access by pulling back the cover, so it's easy to get your hands and elbows in there (if necessary, as someone else who has dealt with nerve issues and who may continue to deal with weak hands for the rest of her life). Forward facing it's easy enough to grab the belt at both sides and feed it into the retractor to help get it tight enough, leaning into it with your knees/thighs.
