we're looking at one of these, but just wanted to ask if anybody knows anything quirky or whatever about them..like, the seatbelts make it impossible to install carseats, etc.

I had a 1998 Windstar and I loved it for installing seats. It has the auto retract seat belts so I was also able to get a really good install with all of the seats that I tried. I have tried a: Nautilus, Comfortsport, SS1, AOE, Marathon, Cosco Ventura, Turbo booster, and snugride.
I have an 01 and love it. (I think the body style was still the same.) The only seat I've ever had issues with is the Regent in the Captain's Chair. The rigid belt stalk did not work with recline bar sbp ff. Mine has 6 top tether anchors, lower anchors in both captains', two outboard back bench or middle back bench (can't be shared). I'll try to remember all the seats I've installed:

Britax Boulevard
Britax Parkway (booster)
Evenflo Triumph and EFTA
Graco Snugride
Graco Nautilus
Safety 1st Apex 65
Cosco Alpha Omega Something (friend's seat)
There may be others but like I said it seems very car seat friendly to me.
