How does the LATCH work for these? Meaning, since my son is 79 lbs, can I still isn't te seat?

You can use the latch up to the maximum weight limit of the seat. The latch only holds the seat while the seat belt holds the child, and the seat is only a few pounds so way under the latch limits. Hth!
