Convertible carseat for newborn

We are looking at getting a different carseat for my granddaughter an using her current as a back up/spare. She is currently in a Cosco elite. While there is nothing wrong with the seat it doesn't have a couple features we would like.
We would like an infant insert, an strap covers as well as an adjustable recline ( for when she gets a little bigger.
If everything goes through today she will be in a 2017 ford escape.
Now from reading this year escape the center has 18inches between latch hooks. We don't have a problem using a seatbelt installation, but the center latch being usable is a plus.
Baby was born 5lbs 5oz an is probably 6-7lbs now at 1 mnth, so still on the smaller side.

For a smallish newborn and seeking those features, I would probably try the Chicco Nextfit. It won't allow a center LATCH install, though. You could also do the Nuna Rava, also very well padded. Also no center LATCH in this vehicle. And it doesn't have a recline indicator, so you have to be careful on that with a newb, and it's very expensive and larger at a newborn angle.
Both of those seats are very easy seatbelt installs, though.
Graco seats do allow the center LATCH install there, and come in various trim/padding levels, if you want a more budget conscious seat, but try before you buy because fit is hit or miss on babies this size. If you wait a month they're likely to fit better.
