I read that some airplanes have inflatable seatbelts. Is this true, and if so, is it something I need to be concerned with when flying with a child in a carseat?

Yes, some commercial aircraft have seatbelt airbags, aka inflatable seatbelts. I found a list on Wikipedia of the airlines and types of aircraft where you may find them.

They are not common on most U.S. airlines.

You would need to check with the manufacturer of the car seat as to whether you could use the seat with them. A few years ago, most manufacturers were saying, no. But I'm not sure if things have changed.
