What is Ford's LATCH limit? Does it include the only the weight of the child, or the weight of the child plus the seat?

Yes, 48 lbs. child's weight only if it's a pre-2014 model year (MY) Ford. 2014 model year Fords have the 65 lb. total combined weight of the child plus weight of the carseat for the LATCH installation weight limit.
