Do I need EPP foam instead of EPS?

I can't figure out the whole story on EPP. DH told me last summer that Dorel was going to start using the "race car" foam in their 2012 seats, that it absorbs and disperses the energy better in a crash vs EPS. But as far as I can tell, EPP has been used in carseats for awhile-this doesn't seems to be new. And some of the seats that I'm interested in don't seem to have it (Recaro Prosport, for ex). Is it really much better? Do I need to limit my options to EPP foam?

No, you don't need to limit yourself. EPP tends to be more durable than EPS over time because it's more pliable and can give or bend a bit without cracking and breaking but both are excellent at absorbing energy in a crash. The type of EPP your husband is talking about is a very high grade (and expensive) form of EPP that is used in race car seats. That type of EPP is very different from what is currently used in any CR on the market right now.

In short, if you like the ProSport - don't let the fact that it uses EPS instead of EPP be a deal-breaker.
