I made your sauce recipe tonight. I didn't have any celery, so I sauteed some finely chopped mushrooms, onions and minced garlic in the earth's balance. Then I threw in the veggie broth and milk/water combo(I use soy). I threw in some fresh parsley, and then tossed it in the blender to hide the onions and mushrooms from the kids! Put it back in the pot and I used flour to thicken, since I was out of cornstarch. Some salt and pepper, tossed it with fettucine noodles, and wow, it was almost like an alfredo sauce! Or a stroganoff-y type thing. Very yummy. Elliot loved it, but Ian the picky one saw the parsley and freaked about the green stuff.
