Dairy-free recipe success!

I made a tuna noodle casserole tonight, sort of based on Kashi's dairy-free tuna noodle casserole on Recipezaar, but I tweaked it a little bit, making my sauce more like the dairy-free condensed cream soup substitute that LuvBug gave me.

I sauteed thin-sliced celery and carrots in Earth Balance margarine, added a cup of veggie broth, 3/4 cup of plain almond milk and 1/4 cup of water, plus some dried garlic and dried parsley. I thickened it with a pinch of cornstarch.

I mixed it with two cans of tuna and about six cups of whole wheat spiral pasta and baked it for about 10 minutes. YUMMY!

Even Hayley liked it, which is the true test. She picked out most of the carrots, but ate raw carrots on the side. :rolleyes:

mmmm sounds yummy! I wanted to make something tuna tonight but we ended up having chicken because nothing came to mind, Ill have to remember this for next time.
And glad that cream sauce worked out for you. I must have typed it telepathically through someone else :p (I think it was Jennifer who posted it?)

How funny! I made that for dinner and I tweaked it too. I'm glad it turned out well. Evan ate some which was great and as usual AJ thought I was trying to poison him. :)

Ack, yes, it was Jennifer! :eek: For some reason I always mix the two of you up in my mind, and I have no idea why!

Mark has a big plate of the leftovers to take for his lunch tomorrow, but of course he had to add cheese. He loved it! And it was sooo easy and quick, almost as easy as hamburger helper (and soo much healthier and tastier).

Mmmm..that sounds good. I think I'll experiment with a vegetarian version of that this evening, with a big green salad from Dh's garden--spicy greens. Thanks for posting!
And Elliot will only eat his veggies raw as well--no cooked veggies for him! When we eat Chinese, we order him a 1/2 order of vegetable lo mein with the veggies raw on the side....:D
