According to the LATCh manual, there are three fulls sets of LATCH, however, the center and outboard driver's side overlap and only 2 out of three positions may be used simultaneously, and you may not connect 2 restraints to one connector.

No!
The center & driver outboard connectors over lap each other. If you put the driver outboard in the pass. outboard using LATCH then your fine.
Here is out it is set up
pass.=p center=C Driver=d
p p C d C d
See how the C & d cross over each other? You can have 2 connectors crossing each other and it's not allowed per the owners manual either.

Nope, because they overlap. You can't install it that way. You can put them center/passenger side OR passenger side/driver's side, but NOT center/driver side.
