I imagine this has been asked a million times, but is it safe to buy one of those mats that go under car seats to protect the interior, and some have storage pockets?

There is one that is polar fleece, that one would be thin enough. You really do not want to do anything thicker than a towel. Anything else can give you a false sense of tightness for your car seat.

Also, if it's made by the car seat manufacturer to be used with that seat, you should be ok. The fleece one is nice and thin. A thin towel also works fine.
If you live in a really hot climate, you may want to make sure that the fabric doesn't bleed out color or melt down on your upholstery.
Again, i like plain cheap thin towels to put underneath.:twocents:
