Definitely 1 I'd say. I think your seats are sloped enough that it would be too upright without a noodle or towel.

I have really sloped seats in my truck and have been using 1 noodle. I recently made it more upright and am still using the 1 noodle, but I pulled the base of the EFTA slightly away from the seat bite while still having it on the noodle - similar trick as installing the MA more upright. It's way more upright now, despite still having 1 pool noodle in there.

(I should take a pic after dh is home tonight to show the difference between before & after, it's quite dramatic despite still using 1 pool noodle.)

Do you just have one noodle in there right now?

It's either 2 or 3, IIRC from when it was initially installed it's 2 noodles.

Also worth noting, I found that I could get similar angles but with different locations of where the knobs touched the seatback depending on how I positioned the seat and where I put pressure when tightening it.

Both of the installs pictured above are rock solid. ;) The knobs are easier to access now than they were with the seat more reclined, but it took me a good 30mins to find the best positioning to get the recline I wanted with the knobs positioned the best. I could use the knobs in all the ways I tried, I just realized it was possible to get them more accessible through positioning and decided to fool around with it.
